12 oz spinach linguine or whole wheat spaghetti
1/2 cup unsalted peanuts (optional)
1/2 cup creamy natural peanut butter
1/4 cup low sodium soy sauce
1/4 water
2 tbsp rice vinegar
2 tbsp lime juice
1 scallion (white and green parts), cut into pieces
1/2 tsp ginger
2 tbsp brown sugar or equivalent substitute
1/4 tsp red pepper flakes, plus more to taste
1. Cook pasta and rinse with cold water.
2. Toast peanuts, if using, in a small dry skillet over medium-high heat until fragrant, 3-5 minutes, stirring frequently. Set aside to cool.
3. Make the sauce by pureeing peanut butter, soy sauce, water, vinegar, lime juice, scallion, ginger, brown sugar, and red pepper in blender until smooth.
4. Right before serving, toss the pasta with 3/4 cup of the peanut sauce. Reserve rest of sauce to drizzle on vegetables such as steamed broccoli, sugar snap peas, snow peas. Coarsely shop toasted peanuts and sprinkle on top.
Very good with those vegetables. Make sure sauce is not too thick, add more water as needed so that noodles are not too sticky.
Serves 6.

Sounds good. What is the difference between a scallion and green onion? Also, you shouldn't rinse noodles, you loose a lot of nutrients this way.

Scallions and green onions are the same. Good fat (like peanut butter) is needed in this diet.

I used the more expensive Ziggy's brand of linguine (regular, not spinach) found in the deli section of Zeher's. No need to add the peanut topping as the delicious peanut sauce provides ample peanut taste by itself. The tasty sauce worked very well on the side of steamed broccoli. I will steam a larger variety of veggies next time. This is a winner. Our daughter, Kelsey, loved it and even our 2.5 year old grandson dug in.
