This is very EASY and my kids LOVE it!! It is also very cheap,and I always have this ingredients around. However it takes a long time to cook, so not inexpensive with using cooking gas. Jen - this could probably be made on the stove with our new cookware!
1/2 c uncooked lentils
1/4 c soy grits
1/2 c whole grains (brown rice, barley, etc - I use barley)
1 small onion chopped
3 c vegetable broth
1 Tbsp parsley
1/2 tsp basil
1/4 tsp oregano
1/4 tsp thyme (I omit this)
1 tsp garlic powder
Mix in a casserole dish, bake covered for 90 min at 300. This recipe calls to top with shredded cheddar cheese, it tastes fine without, you could use a soy substitute if you wanted to.
