1 large Jicama, peeled and chopped1 red pepper, cut into 1/4 inch pieces1/2 bunch green onions, chopped1/2 cup roasted corn1 small Spanish onion, chopped4 ounces mixed young wild salad greens (or some salad mix)chopped cilantro to tastedressing. Mix together.1 1/2 tablespoon chipotle paste1/3 cup extra virgin olive oil1/4 cup rice wine or champagne vinegar1 1/2 teaspoon kosher salt1 1/2 teaspoon minced garlicMix and chill and eat!
