Our favorite thus far in the RAVE Diet cookbook.
15 oz. can chickpeas
1 cubed sweet potato or squash
1 cubed zucchini
1 diced red bell pepper
1 diced green bell pepper
1 diced yellow bell pepper
1 clove garlic, minced
2 cups uncooked couscous
1/2 cup raisins
1/4 cup water
2 tsp. veggie broth
1 tsp. ground cumin
1/2 tsp. allspice
1/2 tsp. ground ginger
1/2 tsp. turmeric
1/2 tsp. paprika
1/4 tsp. cayenne
1/4 tsp. cinnamon
Saute zucchini, sweet potato or squash, and garlic in veggie broth, about 5 minutes. Use water as necessary to keep veggies from sticking. Drain and rinse chickpeas. Add spices, chickpeas and peppers to the pan. Cover and cook for 5 minutes. Meanwhile, place couscous and raisins in another pan. Add enough water so that the couscous is covered by about 1/2 inch. Bring the mixture to a boil, then cover tightly, remove from heat and let stand 10 minutes. Remove cover from veggie mixture, stir and cook a few minutes longer to heat thoroughly and thicken. Serve this over the couscous. YUM!
