Crockpot Three bean chili with bulgur

This is a little spicy and it could be less so if you add less chili powder. My kids loved it and Brian could hardly believe it was meatless! I actually liked this better than our old chili recipe.
Also, this makes a lot so you could 1/2 the recipe. I was glad to have leftovers though.

1-2+ TBSP Vegetable broth or water to saute veggies
2 Onions finely chopped
4 Carrots, peeled and diced
4 Celery stalks diced
4 Garlic cloves minced
2 TBSP chili powd.
1 TBSP dried oregano leaves
1 TBSP cumin (I did a little less as this add a lot of heat)
2 tsp salt
1 tsp cracked black peppercorns
1 can (28 oz) tomatoes with juice (I used diced)
3 large prtobello mushrooms stemmed and cut into 1/2 inch squares (I used baby bella and diced them)
3 Cups vegetable stock
1 Can (14-19 oz) white kidney beans, drained and rinsed (or 1 Cup dried white kidney beans cooked and drained)
1 Can (14-19oz) red kidney beans, drained and rinsed, (or 1 Cup dried red kidney beans cooked and drained)
1 Can(14-19oz) chickpeas/garbanzo beans, drained and rinsed (or 1 Cup dried chickpeas cooked and drained)
1 Cup bulgur wheat

In a skillet, saute onions, carrots and celery with 2+ TBSP veg. broth stirring until soft, about 7 min. Add garlic, chili powder, oregano, cumin seed, salt and peppercorns and cook, stirring for one minute. Add tomatoes, with juice, and bring to a boil, breaking up with spoon. place mushrooms in bottom of crockpot. Pour mixture over mushrooms. Add vegetable stock, white and red kidney beans and chickpeas and stir to combine.

Cover and cook on LOW for 8-10 hours or HIGH for 4-5 hours, until mixture is hot and bubbling. out 30 minutes before serving add bulgur. Cover and cook until bulgur absorbs liquid and is tender. May need to add more broth if it gets to dry. It is a very thick chili. I added about 1/2 Cup tomato juice at the end b/c it was too think once the bulgur was cooked.

This sounds so yummy! Can you freeze it for individual servings? I would be the onlyone eating it.
