Whole Wheat Flaxseed Pancakes

This recipe is a from a combination of a few recipes we’ve been trying. So far, we really like this one.

Makes about 18 Pancakes.

  • 2 cups whole wheat floor (not white, enriched, or wheat, but 100% whole wheat)
  • 1/4 cup milled Flaxseed
  • 1 tbsp baking power
  • 1 teaspoon baking soda
  • 1/4 cup apple sauce
  • 2 cups of rice milk
  • 3/4 cup of water
  • 1/4 teaspoon salt
  • [ optional ] Add blueberries or strawberries. You can also substitute 1/4 apple sauce for 1 banana.

This same batter also works great for Waffles too.


Cook on a griddle at 325.
For syrup on top of the pancakes simply use 100% pure maple syrup, or my personal favorite is to put about 1-2 cups of blueberries in a pot with about 1/2 cup of water and a bit of sugar. Bring to a boil and simmer until you have blueberry syrup!

We have made these several times. Yummy! I use my Saladmaster oil skillet and cook them 350 degrees for 2 min/side. And I leave out the maple syrup and just put that on top. (the homemade syrup sounds yummy, I just don't take the time to do it)

So 1/4 tablespoon and 3/4 tablespoon?? I don't have those spoons. Do you mean teaspoon? Also, is it a 1/4 "Cup" of applesauce. I went to make these this morning and am a little confused. I hope they turn out :)
