2 1 liter cans of tomato juice (get kind without corn syrup)
2 cans tomato paste
1 chopped onion
3 cloves garlic
2 minced celery
4 shredded carrots
1/2 shredded zuchinni
1 bag of corn
4 cups of cooked beans (any kind- kidney, chickpeas, pinto- I try to mix it up)
4 tbspn Chili powder to taste
Noodles or rice if you want to stretch it :-)
Toppings: shredded cheese, sour cream or plain yogurt, minced onions, tortilla chips
1. Sautee onions, garlic, celery, zuchinni and carrots in a stock pot for about 10 min.
2. Add tomato juice, tomato paste, frozen corn and chili powder. Heat to boiling, then turn down to simmer for 1/2 hour.
3. While that's happening, prepare the rice or noodles and other toppings.
4. Add beans. Simmer for an additional 1/2 hour.
5. Dish out and top and enjoy!
If you have extra salsa around you want to get rid of, you could throw that in.. or some cilantro for additional seasoning.
