2 celery stalks chopped
2 green onions chopped
2-3 garlic cloves minced
4 cups cooked and mashed squash (I used butternut)
2 cups vegetable broth
2 cups milk (could use more broth is desire instead)
1 apple chopped (I left skin on)
2 cups frozen corn
1 cup frozen peas
1/2 tsp nutmeg
1/2 tsp salt
1/4 tsp pepper
(could also add chopped carrots, rice, barley and/or black beans)
Combine in soup pot and cook until veggies are tender. Adjust spices as desired. My kids don't like much "flavor" so it's a little on the bland side. I totally made up this recipe, so just use whatever you have on hand and add more liquid as necessary.
